KNOWLEDGE RELATIONSHIP WITH PERSONAL HYGIENE APPLICATION IN FOOD PROCESSING POWER PLANT NUTRITION HOSPITAL

ABSTRACT

Food processing power is a power handling food and be directly involved in the preparation, processing, transporting and serving food. From preliminary observations showed that workers pay less attention to food processors which do not use the personal hygiene apron, pentup head, footwear, masks and less attention to the preservation of food. The research aimed to determine the relationship of knowledge to the application of personal hygiene in the food processing Nutrition Installation Dr.M.Yunus Hospital Bengkulu.
This type of research is quantitative research methods analytic survey with cross sectional study population in this study were all workers in the food processing Nutrition Installation Hospital personnel numbering 35 food processing (total sampling). Data were analyzed using chi-square test were presented preformance tabular and narrative. The results were obtained most of which 42.9% with good knowledge, personal hygiene application of more than 54.3% partly not eligible.
There is a significant relationship between knowledge workers with the application of food processing personal hygiene On Installing Nutrition Hospital Dr. M. Yunus Bengkulu. Where ρ = 0.021 and OR value of 7.429.
Expected should be the improvement of counseling conducted by the Hospital to the official food processors about the importance of the application of personal hygiene in the food processing power installation Hospital Nutrition Dr. M. Yunus Bengkulu, food processors that power to know and understand the importance of personal hygiene during food processing.

HUBUNGAN PENGETAHUAN DENGAN PENERAPAN PERSONAL HYGIENE TENAGA PENGOLAH MAKANAN

DI INSTALASI GIZI RUMAH SAKIT

ABSTRAK

Tenaga pengolah makanan adalah seorang tenaga yang menjamah makanan dan terlibat langsung dalam penyiapan, pengolahan, mengangkut maupun menyajikan makanan. Dari observasi awal diperoleh bahwa tenaga pengolah makanan kurang memperhatikan personal hygiene dimana tidak menggunakan celemek, pentup kepala, alas kaki, masker dan kurang memperhatikan penjagaan makanan. Adapun tujuan penelitian untuk mengetahui hubungan pengetahuan dengan penerapan personal hygiene pengolah makanan di Instalasi Gizi Rumah Sakit Dr.M.Yunus Bengkulu.
Jenis penelitian adalah kuantitatif dengan metode penelitian survai analitik dengan rancangan cross sectional populasi dalam penelitian ini adalah seluruh tenaga pengolah makanan di Instalasi Gizi Rumah Sakit yang berjumlah 35 tenaga pengolah makanan (total sampling). Teknik analisis data menggunakan uji chi-square yang disajikan dalm bentuk tabel dan narasi. Hasil penelitian diperoleh hampir sebagian besar yaitu 42,9% dengan pengetahuan baik, penerapan personal hygiene lebih dari 54,3% sebagian belum memenuhi syarat.
Ada hubungan yang signifikan antara pengetahuan tenaga pengolah makanan dengan penerapan personal hygiene Pada Instalasi Gizi Rumah Sakit Dr. M. Yunus Bengkulu. Dimana ρ = 0,021 dan nilai OR 7,429.
Diharapkan hendaknya adanya peningkatkan penyuluhan yang dilakukan oleh pihak Rumah Sakit kepada petugas pengolah makanan mengenai pentingnya penerapan personal hygiene tenaga pengolah makanan di Instalasi Gizi Rumah Sakit Dr. M. Yunus Bengkulu, supaya tenaga pengolah makanan lebih mengetahui dan memahami pentingnya melakukan personal hygiene pada saat mengolah makanan.
